As you can see, I take nutrition very seriously. It is very important to me to show you that a body like mine does not result simply from taking steroids. It bothers me that most people think that. The main requirement, of course, is hard work. There is some challenging science involved regarding nutrition and of course, choosing your parents wisely also helps. To eat the way I do also requires extreme discipline. I have to eat weighed, specially prepared food every two to three hours; I have to train three times a day; I have to rehearse my posing; and I have to do photo shoots, etc. This is a full-time job. My freedom is very limited. I can't just go and watch a movie or go to a restaurant, because I would have to bring my food along with me. Most people have no idea what a hard job it is being a professional bodybuilder.

I wish more foods would list all their nutrients on the labels. I get some of the information from books or www.USDA.gov , but I'm still not able to determine exactly how much of which vitamins or minerals I get from what I eat. I try my best to get at least an idea how much nutrients my body gets from the food I eat -- that gives me a basis to supplement my diet without taking in to much of any nutrient. As you'll notice, I don't eat enough vegetables. The reason is that I'm already eating huge amounts of food to feed my muscle mass. Vegetables provide very little energy and take up a large amount of space in my stomach. I use supplements to try to get the vitamins and minerals I lose by not eating enough vegetables. From time to time, I take extra fiber supplements, which also have a colon-cleansing effect.

Two weeks before the competition, I cut all the supplements, except vitamins and minerals, out of my diet. I don't want to risk having any of those supplements affect my water balance. Because all of my protein shakes are high in quality, I take them up to the last three days before a competition. But they have to be pure protein -- without creatine or other supplements that could make me retain water. The last three days before the competition, I reduce my protein intake about 50% (I also change the protein source to meat only) and raise my carbohydrate intake, depending on how my muscles feel, to 800-1000g per day. I know my body very well, and I can feel whether or not my muscles are filled with glycogen. Moderate activity during the carbohydrate-loading phase very important because the glucose is supposed to be stored in the muscles and not in other tissues. Glucose binds water. A bodybuilder wants to hydrate his muscles to look full. If you eat to much carbohydrate, your body can store the excess glucose in other tissues. As a result, you retain water under the skin. A lot of bodybuilders deplete their bodies from carbohydrates for about three days before they load up with carbohydrates, which is supposed to increase glycogen storage. I don't deplete in carbohydrates, however. I tried it a couple of times, but I was never able to refill my muscles afterwards. As a result, I looked flat and not as hard. In my opinion, carb depletion is not recommended for massive bodybuilders like me.

In the days before the contest, I try to reduce my sodium intake as much as possible. I eat only rice, yams and meat without any seasonings. In addition, I drink about 2.5 gallons of water. Some bodybuilders start lowering their sodium intake way too early. After three days, the body has lost the maximum amount of water. It then starts to protect itself from losing more water by holding sodium back and releasing hormones that are binding water. If you eat low sodium all the time, you will not be able to lose the excess water from your skin for a competition.
