You'll need:

Chicken breasts (halved down the middle) with the skin and bone on (cheap).

1/2 cup salt.
2 cups soy sauce.
1 tbsp garlic powder.
1 tsp ginger powder (if you want).

Mix all the spices together in a metal bowl. Now toss the breasts in there and get them as coated as you can. Let them sit for 10 minutes and then mix them up again. You want the salt to pull the moisture out of the skin. Do this for 30minutes to an hour. Now, fill your sink with cold water and dunk the breasts in there to wash all the salt off. Swish them around quickly. Take them out and pat them dry with paper towels and put them on a cookie sheet or roasting rack. Cook them at 45 minutes at 350 or until they start to get very brown (make sure they're cooked through). A trick is to fire the oven on high so the top and bottom grill come on and let them get roasted for the last few minutes. Enjoy.

I love these because they taste great, aren't messy, realtively cheap and make great snacks.
