✳️Pistachio Coated Goat Cheese with Raspberry Coulis
Makes: 6 servings

Ingredients:
8 ounces fresh goat cheese
½ cup chopped pistachios
¼ cup sugar free raspberry jelly

Method:
1.Lay out a square piece of parchment paper onto a flat surface.
2.Place raspberry jelly in a microwave safe bowl, microwave on high for 1 minute, remove, stir until smooth, then set aside until step 4.
3.Portion chopped pistachios in a 6 inch by 4 inch rectangle and place goat cheese horizontally along the pistachios.
4.Roll goat cheese around the pistachios until evenly coated, slice into six equal portions and serve chilled with raspberry coulis. -
