I LOVE PB, thats awesome. I am getting really tired of my Fajitas/ chicken and steak I have been eating, so I think I am going to have to change it.

I might start doing chicken enchiladas using whole wheat tortillas for lunch. should I keep cheese to a minimum and use more tomato sauce? any recommendations for that?
 
yes, but theres not a lot I dont think. Some protein, and healthy fats.

If you have an option between flour(wheat) or corn use corn. Besides, speaking a Mexican here, enchiladas don't work with flour tortillas. If you are going to use cheese, keep to reduced fat cheddar. I would also use enchilada sauce as well- tomato sauce won't taste all that good. I would also boil by own chicken and shred, but if you can't, then you can use the pre-shredded chicken, only watch out for the sodium(washing the chicken will help).
You can actually make these before hand as well.

Yes- the food can get monotonous, but you can use spices and condiments, to change the profile- add lime juice to the chicken fajitas, add some cilantro, no salt seasoning, some salsa- you have a lot of options.
 
so funny MMX2 with the enchiladas my mom said the same thing about boiling the chicken and using the enchilada sauce. I have everything prepared when I get home this weekend. I just need to go buy some low fat cheese ad corn tortillas. I am very excited to try this new recipe. I was also thinking about stuffing them with brown rice as well, but that might just be extra carbs. I will probably load them up with chicken!!!

Don't really need the rice- focus on the chicken as the primary food source.
Let me know how it turns out.
 
I am not worried at all about sodium intake. So i might hold a little extra water, no big deal for me. So please factor that out as well.

I think rice cakes are fine- plain if your going to do w/peanut butter. I know you are not worried about sodium, however, choose the regular peanut butter vs. the reduced fat version- the regular has less sodium.
 
yea, i use the regular. I am just tired of eating the same stuff for the last 2 months. So im changing things up quite a bit. Now were looking at

meal 1 = 1 cup egg beaters 2 slices whole wheal toast w/ small amt of ketchup
meal 2 - chicken enchilada on corn tortilla or 2
meal 3 - can of tuna and triscuts or roast beef sandwich on whole wheat bread
meal 4- Myoplex shake or roast beef sandwish on whole wheat bread or chicken enchilada
meal 5- Myoplex shake or roast beef sandwich on whole wheat
meal 6- before bed 1/2-1 can of tuna, 1 rice cake w/ peanut butter on it.
