Golden Pumpkin Waffles

1 cup whole wheat pastry flour
1 cup whole grain cornmeal or brown rice flour
2 tablespoons sugar
2 teaspoons baking powder
3/4 teaspoon baking soda
2 1/2 teaspoons pumpkin pie spice
4 egg whites
1/2 cup pumpkins, mashed,cooked,or canned
1 cup skim milk

1 Coat a waffle iron with nonstick cooking spray, and preheat according to manufacturer?s directions.
2 Combine the whole wheat flour, cornmeal or brown rice flour, sugar, baking powder, baking soda and pumpkin pie spice in a large bowl, and stir to mix well.
3 Set aside.
4 Place the egg whites in the bowl of an electric mixer, and beat on high until soft peaks form.
5 Set aside.
6 Add pumpkin and milk to the flour mixture, and stir to mix well.
7 Gently fold in the egg whites.
8 Spoon 1 1/4 cups of batter (or amount stated by manufacturer) onto prepared waffle iron.
9 Bake for six to eight minutes, or until the iron has stopped steaming and the waffles crisp and brown.

These really are good, I made them over the weekend, I used
the brown rice flour and poured diabetic maple syrup all over them.

Be sure to mix a 1/4 cuo of the batter into the egg whites before folding them in. It makes it go faster and helps retain volume. Also, be sure to make all the pancakes as fast as possible as the egg whites will deflate over time.

Wrap any leftovers in plastic and freeze. They reheat perfectly in the toaster!
