This is why there is no oil later on the regular peanut butter, because the oil is hydrogenated. The natural peanut butter contains no hydrogenated oils therefore being all natural. Hydrogenated oils are much more difficult to digest depending on each person's digestive system. You might not be able to fully digest the Omega fats that are present in the peanut butter. Also, through the hydrogenation process, preservatives are added to keep the oil from going bad. Now you may say that you don't see any preservatives on some labels. The reason being is that per the FDA, if preservatives are added via a process and not the final product, the preservatives do not have to be outlined in the ingredient listing.
