Refined Carbs Linked to Obesity

WORCESTER, Mass. (February 22, 2005) - Refined carbohydrates, such as sugars, appear to cause more weight gain than equal amounts of complex carbohydrates, such as grain-based foods, fruits and vegetables, researchers reported last week in the American Journal of Epidemiology. The study is one of the first studies to link the type, not the amount, of carbohydrates and calories to the rise in U.S. obesity rates during the past 20 years. It could help bolster the image of foods like breads, fruit and juice, which are still suffering from sales slumps blamed on the low-carb diet craze. Citing a one-year study of 572 adults, researchers at the University of Massachusetts Medical School here said the amount of carbohydrates their subjects ate appeared to have no influence on their body mass index — a measure of weight that factors in height. Instead, overweight subjects tended to eat refined carbohydrates, while subjects with lower body mass indices ate similar amounts of complex carbohydrates. The difference was attributed to the immediate spike in blood-sugar levels caused by the consumption of refined carbohydrates.
