Chicken Dijon
makes 4 servings

1.5 lbs boneless, skinless, chicken breasts
1 tbsp. Dijon mustard
water
1 tbsp. butter
1 tbsp. flour
Salt and pepper to taste

Cover the chicken with water and bring to a slow boil in a covered pot. Cook for 6 min. or until done. Reserve 1 cup of the liquid. Melt butter in a saucepan over med. heat. Add flour and stir constantly until mixture turns brown. Add 1 cup reserved liquid, then stir for 4 more minutes until sauce th ickens. Add mustard; stir until smooth. Pour over chicken and serve.

Nutritional info. - 289 calories, 50 g protein, 2 g carbs, 8 g fat.

Add salad to this to make it a more complete meal
 
I didn't have flour so I substituted with corn starch. I had a side of slightly buttered broccoli, and for dessert had a kid size container of cinnimon apple sauce to cure a sweet toothe. (this for me was not a growing meal, I need much more, but a good meal for someone watching thier figure or looking to lose weight - great light portions and satisfying for the normal human being - I'm far from normal).

However Spidey, thanks for the recipie, this was EASY to make, little to zero prep time, and tasty for those who want something flavorful and cleanup time is minimal. I will definitely be making this again especially when time is short but my pallet needs flavor.
