Apricot-Stuffed Pork Loin

Aprico-Stuffed Pork Loin
makes 4 servings

1 boneless pork tenderloin, 2-2.5 lbs (adk the butcher to butterfly it)
15 dried apricots
1 cup water
String
Salt and Pepper to taste
Olive Oil cooking spray

Preheat oven to 250 degrees F. Boil water. Pour boiling water over dried apricots in small bowl and let htem soad for 20 minutes or until softened but not mushy. Drain apricots, reserving the liquid and then chop them. Open the tenderloin and stuff it with the apricots. Close the tenderloin and tie it with string in four evenly spaced places. Season with salt, pepper and ginger (if you want). Spray a pot, with a close-fitting lid, with cooking spray and place over high heat, uncovered. Sear each side of the tenderloin for 2 min or until golden brown. Add reserved liquid. Cover and roast in oven for 25 min or until meat thermometer reads 155 degrees in the thickest part of the tenderloin. Remove from over and let meat rest for 10 minutes before cutting and eating.
