:thumbsup: Alright, here it is.
Ingredients: I loaf french bread, shredded parmesan cheese, 1 small can black olives, 1/2 cup sun dried tomatoes w/marinade, 1/4 cup garbonzo beans (chickpeas), a dash extra virgin olive oil, a dash balsamic vinegar, 1 dash salt, 1 clove garlic; mashed, 1 dash onion powder, 1/4 cup anchovies or escargot--Don't fear them--good protein~W/omega-3 fatty acids and polyunsats!

Slice eggplant into 1" patties then wrap in foil and add a dash of olive oil and basamic vinegar. Place in over @ 350 for 10 minutes and rotate every 5. If you don't have a grill do process for 45 minutes rotating every 10 minutes.

Grillers: remove eggplant slices and grill.

Sauce: In a food processor blend black olives, sun dried tomatoes, garbanzo beans, olive oil, balsamic vinegar, anchovies or escargot and spices.

Grill 2" thich slices of french bread x 2. When done add a pinch of shedded parmesan cheese. Next, add a slice of grill eggplant and top with chilled prepared sauce.
