wheat bread lasagna

Im not going to get into specifics. Just cause most of you wont be making any kinda of lasagna. But my wife is vegetarian, and its really hard to get her to eat right. So one of the first things i started doing is supplementing regular pasta with wheat pasta.

In dishes such as lasagna, you cant even tell your noodles are made with wheat. The 3 diffrent cheese can pretty much cover the taste and i get away with not only filling it with spinach, but also broccoli.

lasagna is really easy to make. Its just a little more prep time (about 1hr).

you have to boil the noodles, and in my case boil your spinach, and broccoli. You also have to mix ricotta, mozzarella, and parmesan. I also like to make my mushrooms pop, so i saute them in with garlic and tyme.
 
Damn Son,,,i think you should change your name to Rachel Ray...J/k, sounds good, but i only cook for myself and wouldnt have motivation to make dishes like this. I have used the wheat pasta and the low carb noodles though, they taste pretty good.
 
it is amazingly good. Between that and a full plate of shak'n bake chicken... i ate like a horse the last 2 days.
 
i took 2 zucchini and 2 squash from the garden, mixed in some spinach and made it the other night.
