My garden is producing veggies faster than i can cook. Specially the zucchini. So im looking for ways to cook it up and make my vegetarian wife happy.
1 onion
2 cloves of garlic
1 spaghetti sauce
1 bag of mozzarella
2 tbl. of olive oil.
all you do is cut up the zucchini and boil till soft (5min). while boiling the zucchini, cut up onion and garlic. Place cut unions and garlic in frying pan with 2tbl. spoons of oil. fry them up till light brown.
Take your favorite spaghetti sauce and place in casserole dish. If your trying this for the first time and dont know if you'll like it- do what i did last night... grab a meal loaf dish and cut the portions in half. place in your speghetti sauce, garlic and onions in that dish. Stir them up so you have a mix.
drain the water from your boiled zucchini. Add zucchini to your garlic/onion/sauce. stir together well. You can play with the mix to get the right mixture. I added 2 veggie burger patties to give this dish some more protein. when your done with this mix, take your mozzarella cheese and spread over the top.
spray cooking spray over aluminum foil. cover dish and place in pre-heated oven. set at 325 for 30 minutes. let cool and serve.
