Anybody make their own jerkey?

I bought a cheaper dehydrator today to do my deer jerkey in this year. I just put in some with just a homemade rub i wipped up to try it out. This is my first time using one. Gonna buy a jerky gun next week so i can just put 94/6 lean beef in there with all the spices etc already mixed in and just make all the jerky i want for snacks. Anybody else have any recipe's tips etc?
 
Yeah i got 110 pounds of venison now about 40 of that i can make into jerkey if i want. Im gonna eat alot of the hamburger meat a different way though. Hell ill even make some 97/3 lean turkey jerky too. This is gonna be great haha ill be eating jerky for meals haha. The rub i made i used salt substitute and no sugar so its gonna be really healthy gonna give it a taste here in about an hour and a half its getting pretty dry already. Cant wait to try it.
 
naww they will keep in an air tight container for a few weeks at a time. The one i bought was only 34 bucks. It has 7 trays and so far is working great ill keep you posted and post a link if you want.

should be fine lol they said it is cool to just throw it in the top rack of the dishwasher. this is my first batch ever lol so ill let you know as i go.

Nice major ive never done my own i usually just get the processor to do it but im glad i got one. Now im gonna live on jerky ha.
 
Thats the same kind of dehydrator I have. Love it! Never done the jerky gun thing though. I always just buy bulk cuts and marinate them or rub them and let them go.
 
Yeah I decided to buy my own meat grinder this year and do it myself. A guy told me when you grind your own you know its your meat your getting back and not a deer someone else killed.
 
Yeah i wanna do the gun just so i can know exactly how much fat is in the meat ya know? I can get the leanest beef or turkey etc they have and use that, then i already know what the macro's are.

Yeah if you go to a big processor 90% of the time its not your deer you get. They just weigh it do the % that you will get worth of meat and give you that much weight in whatever you order.
 
Next year I'm gonna get one of commercial grinders from bass pro or cabelas. Gonna cost me a few hundred bucks but it'll be worth it. Might even make some money off people next year if they want me to do theirs.
 
I've been using that same dehydrator you have Get Swole for about three years now. Works wodners. I've been processing my own venison for close to a lifetime for most of you guys lol. I started years ago mixing my ground meet with fresh ground turkey breast. Its not an accurate science and you dont get teh best mix always but it does make for a much better product.
As for the jerky.....I make jerky year round. Great for in between meal snacks and meals on the go.

Most of the time I take both hams and slice for jerky (owning a commercial deli slicer is a great thing) I keep my back straps for filets and the rest either goes into the grinder or if it can be sliced i slice it up for jerky.

Lets hear some recipee ideas or merinades you guys are using.
