(Protein) Apple Cinnamon Bran Muffins

My training partner made these last month and I was hooked. I wish I took a pic before I ate all mine, but they didn't last too long. Enjoy!

Ingredients:
1 cup oat bran
1/2 cup flax meal
4 scoops apple cinnamon or vanilla protein powder
2/3 cup apples, chopped
1 cup granulated splenda
1 tsp cinnamon
1/4 tsp salt
1 tsp baking powder
3 jumbo egg whites
1 tsp maple extract (optional, or can use cinnamon instead)
2/3 cup water

Directions:
Mix the dry ingredients together in a large bowl. Then, add the egg whites, extract and water. Stir until mixed well. Scoop into a muffin pan coated with cooking spray. Bake at 350° F for 20 minutes.
 
It was! I had it instead of my oatmeal for breakfast two mornings in a row. The bran really helps fill you up, plus it's got lots of fiber which is good for... other things. lol.
