View Full Version : Spicy Plum Chicken

serves 2; 2 g fibre/3g fat per serve
ingredients

2 x 125g/4oz skinless chicken breast fillets
1/4 cup/60ml/2fl oz plum sauce
3 tbsp plum jam
1 tbsp soy sauce
1 tbsp honey
6 green onions, finely chopped
1 tsp grated fresh ginger
2 cloves garlic
Make several parallel 5 mm/1/4 in deep slashes in each chicken breast.
Place plum sauce, jam , soy sauce, honey, green onions, ginger and garlic in a bowl and mix to combine,  Add chicken, turn to coat, cover and marinade in the refrigerator for 2 hours or overnight.
Lightly spry a non stick baking tray with cooking oil spray.  Drain chicken and place on tray.  Bake at 220oC/425oF for 20 minutes or until chicken is cooked through.
serving suggestions: For a complete meal serve with boiled or steamed brown or white rice and a tossed green salad.
