Sweet potato chips.

Gonna try some next week probably, seems pretty good and a quick way to get some low glycemic carbs.

Ingredients:
• sweet potato, unpeeled, washed and dried
• Salt
• Freshly ground black pepper

Directions:
Heat oven to 200°F. Make sure there are two racks. Line two baking pans with parchment paper and set aside. Slice potato crosswise, as thin as possible (use a mandolin if you have one). Arrange the slices on the prepared sheets, not allowing them to touch one another. Sprinkle lightly with salt and pepper. Cook for 50 minutes. Slices will dehydrate and shrink. Turn chips over and rotate baking sheets for even cooking. Cook 30 – 40 minutes, until slices are crisped and fluted around the edges and the centers are still orange, not brown. Transfer baking sheets to cooling racks. Chips will crisp as they cool. Store in an airtight container at room temperature for up to 3 days.
 
Sounds pretty good. For those of us who can be more liberal with our carbs, I wonder if this would work for baked potatoes as well? Homemade potato chips...yum.

Yeah im sure that would work just fine bro, probably about the same length of time too or about that anyways.
 
I made my own sweet potato fries once and I couldn't eat a serving's worth... thankfully I only made 1 or 2 potatoes because if there were more, I probably would have devoured the whole thing! lol

So you couldnt just eat 1 serving? sorry at the end i think you like them but in the beginning i thought you hated them. Just making sure i understand you correctly.

I was confused at first too, but I think she is saying they were so good she couldn't stop after just one serving. ;)

Sorry, I wasn't clear. I couldn't eat JUST one serving because they were so damn good... I ended up eating the whole friggin' thing!! :)

lol its fine i kinda understood after re reading it just didnt want you to think i was being a smartass lol. Did you just cook them in the oven like this thing says? Im gonna have to try that too would be easier then cutting into thin slices since i have no mandilan and we all know how tough freakin sweet potatos are to cut with shitty knives lol, i need a new set of knives so bad.
 
I can't remember if I microwaved it to soften it *just* enough to get it into wedges (because that would make sense - my knives suck and I'd probably slice a finger off if I didn't do that), but yes... I baked them in the oven with a drizzle of olive oil, sea salt and pepper. I think you'll definitely enjoy!

And you can be a smartass, I can handle it! :p

I never thought about the microwaving a bit to soften up. Damn thats a good idea it takes me like 10 minutes to cut one of those bastards up haha. Man this sounds good im gonna go get some tomorrow i forgot to get them today when i was at the store :nope:
 
Yeah that makes sense to me too... just a minute or two so you don't break the knife. I'm such a klutz so I'd totally be the one to do that.

Okay, so look what I made as part of our dinner last night! We were starving though, so I really didn't baked them as long as they needed to be baked for but if you did it for the proper amount of time, they would be sooooooo good!
