Porcupine Meatballs

Here is a really easy meatball recipe, only two ingredients, but still delicious. Not for someone on a low carb diet, but I am never on a low carb diet, so I eat them all the time.

Ingredients:

2lb Ground Beef (I use 96/4 Extra Lean)
1 box Beef flavored Rice-A-Roni

Mix the ground beef and uncooked rice in a bowl.

Mix them together until they are a pretty even consistency.

Roll them into balls about golf ball size. At this size they weigh about 1oz each so 8 balls would be 8oz of ground beef.

Put them in a skillet and brown them on the outside. Don't cook them, just make sure they are brown all the way around so they don't fall apart.

When they are all brown add enough water to cover them and mix in the beef flavoring packet from the Rice-A-Roni.

Let them cook over medium heat for 20-25 minutes. The rice will absorb the water and it will cook the beef and the end result is a juicy, tasty meatball.

Little bit of ketchup, BBQ, mustard or delicious just by themselves. Enjoy :)

they dont give you bad gutz at night? i can hear the ceament mixer starting ruuuuuummm babababa!!!!
 
I used to make those all the time... good stuff!!! I used to use the cheesy rice, so it was like a cheeseburger. Damn. I'm hungry again.
 
my mom used to make these in a pressure pot/cooker, then she forgot that it was on the stove and BOOOOOM! meatballs all over the ceiling!!!
