As to wether its Mississippi caviar or Texas caviar, you decide. This is the original recipe I found. Make ajustments where you see fit. I tend to want to throw in more jalepenos and cut the olive oil in half. here we go:
1 (15 oz) can black-eye peas, drained and rinsed
1 (15 oz) can black beans, drained and rinsed
1 (15 oz) can whole kernal corn, drained
2 (10 oz) cans spicy diced tomatoes, drained
1 medium onion, diced
1 medium green bell pepper, diced
3 tablesponns minced garlic
1/2 cup chopped cilantro (1/2 bunch approx.)
2 jalepeno peppers, seeded and finely chopped
2 tablespoons lime juice
1 teaspoon italian seasoning
1 (.7 oz) package dry italian dressing mix
1/2 cup extra virgin olive oil
1/2 cup vinegar

1. Combine all but last three ingredients in a LARGE bowl and stir very well.
2. Combine the dressing mix, oil and vinegar. Pour over mixture and mix well. Chill for 3 hours.

There it is. It goes well with chips but I prefer it as an omlet filling or a side dish with chicken and brown rice.

Per 1/2 cup serving: 130 calories, 7g fat, 4g protein, 14g carb, 3g fiber, 430mg sodium
 
thnx bro thats a pretty original recipe i dont think anyone has even come close to posting,
