Rajun Cajun Pasta or Jambalaya Pasta (no cream)

Cajun Pasta Recipe with chicken. You can add shrimp and smoked sausage too. Just cook seperate and add at the end. This is a big batch recipe just cut in half if you live by yourself or with gf or are not into huge food.

3-4 large split chicken breasts bone in salted oiled
1 knob garlic or 8-10 cloves
1 medium onion diced
1 green bell pepper diced
3 jalapenos two of them seeded(or not_)
3 stalks celery trimmed diced
3 roma tomatoes diced(optional adds freshness)
4 teaspoons cajun seasoning or blackening seasoning (paprika,salt,pepper,celery salt,granulated garlic,granulated onion,cayenne)
2 28 oz cans whole tomatoes(good quality)
3 tblsp sriracha(rooster sauce)
2 tblsp louisana hot sauce
2 tsp sugar
2 tblsp butter
tsp pepper
2 packages FRESH! buitoni linguine or fetaccini
salt to taste about 1 tablespoon total should be plenty. A lot of sodium in hot sauces.
Directions


Preheat oven to 425 degrees.


  1. Roast chicken for 45-50 minutes. Medium rough chop first 6 ingredients. Pour chicken liquid into dutch oven or large pot. Add first 6 vegetable ingredients. Saute on medium low 10-15 minutes in chicken liquid with cajun seasoning. Careful not to burn. Puree tomatoes in processor or hand squeeze. Don't wear a white shirt. Add tomatoes, sriracha, hot sauce, butter, sugar, salt, pepper. Simmer on low like barely bubbling for about an hour to an hour and a half. Adjust seasoning
  2. Cook pasta, fresh pasta takes only like 3-4 minutes. Taste as you cook if you overcrowd one pot could take longer.
  3. Chop chicken into chunks add to sauce when sauce is done. Turn off heat. Chicken is already cooked don't overcook. Or serve on the side.
  4. To save time start the chicken and sauce at the same time and just add the chicken liquids to the sauce when the chicken is done.

Yeah dude if you like it spicy leave the seeds in the jalepenos and you can certainly add more hot sauce. I am very in to spicy foods so I left the hot sauce ratios low to medium. Remember you can always add but you can't take it away once it's in there.
 
Yeah, I don't mind spicy, but if my nostrils are flaring and my nose dripping into my bowl, that might be a problem. HAHA Thanks for the tips! Haven't had good Jambalaya since New Orleans, looking forward to it.
