I dice and sauté about half an onion, 4 or 5 baby carrots, maybe 1/3 of a red pepper (and a green or yellow one, if I have it), sometimes broccoli. Add some salt tovhelp the onion carmelize, 6 or 7 shakes of red pepper flakes for some zip. Once that's going and the veggies are softening up, slice up some mushrooms and toss them in. If I have spinach I'll put some of that in at this point - spinach cooks down to nothing, so use more than you think you should - as well as dice up a slice of thick sliced ham or a few steips of bacon. Diced chicken breast works well, too. While that's getting hot, beat an egg and a half to 3/4 cup egg whites and pour that in. Cook til done, stirring frequently. You could make it an omelet, but I prefer a scramble.

Lol, ya, mushrooms seem to be a love 'em or hate 'em kind of thing. I love them. Put them in salad raw, have them sautéed with onions to go with a steak, etc. My wife likes them cooked, but not raw...

Yeah i think its the look of them, i have eaten things before and not even known their were mushrooms in it, but as soon as i found out it had mushrooms, i didn't like it lol, i suppose its mostly in my head
