2 cups protein powder
1 cup all-purpose flour
1/2 cup whole wheat flour
1 1/2 teaspoons salt
2 teaspoons ground nutmeg
2 teaspoons ground cinnamon
1 cup splenda Granular
1 cup safflower oil
1 1/2 cups applesauce
2 eggs
2 egg whites
1 (15 ounce) can canned pumpkin puree
1/2 cup water
1 cup chopped walnuts


Directions
1 Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.
2 In a large bowl, stir together protein powder, flour, salt, nutmeg, cinnamon and splenda. Add oil, applesauce, eggs, egg whites, pumpkin and water; stir well. Fold in walnuts. Spoon batter into prepared muffin cups.
3 Bake in preheated oven for 16 minutes, or until a toothpick inserted into center of each muffin comes out clean.
