Chicken Tostadas

10 oz can of chunk chicken breast
15 oz can of refried beans w/ chilli peppers
4 six inch tortillas
1 cup of chunky salsa
2 cup shredded lettuce
3 sliced scallions
1/4 cup shredded low fat cheese

Heat oven to 400, put tortillas on foil, and coat with pam. Bake 10 minutes turning once.

Put chicken, beans, and salsa in bowl, microwave for 2-3 minutes on high.

Spread on tortilla, top with lettuce, scallions, and cheese, you may want to add fresh tomatos too.

281 calories, 26 grams protein, 36 carbs, 3 grams fat.

Very tasty, and it's ready in about 15 minutes.
 
I forgot to mention, you can also make this with bonless skinless chicken breast, just season it and through on the grill.

It is much faster with the canned chicken though.
