Glute bridges aren't too girly and they'll build up your ass. Some ATG squats on a smith machine but do short pulses, almost less than half reps while squeezing the glutes the whole time.
You'll be fine running it that long at a lower dose like that, in fact that might be a better way to use SD, especially for me because the sides hit me hard. So thank you for a good idea!

A full throttle diet plan and training program is usually too much for a beginner to wrap their heads around. I totally agree with the less is more at first. If he sticks with it and likes it he'll be eager to move forward and welcome a more detailed diet plan and more work load in the gym.
