Think what you want, but it actually tastes a lot like beef and is incredibly tender. Just over 2 lb bison tongue. Put it in cold water and seasoned water with salt, pepper, garlic, paprika, greek oregano, old bay and boiled for about 3.5 hours. Removed from water and peeled outer membrane off. What's left is tender, delicious meat. And at $4/lb, it's healthy and cheap. Have eaten it alone and sliced it up and made a sandwhich.
