types of egg whites

heres something ive noticed over the years..

when i cook my egg whites (ones right out of the shell) if you under cook them they are watery, and if you over cook them ,they burn alittle, but still taste good.

but when i buy egg whites in the container or frozen ones by the gallon.. they cook differently.... under cooked they are watery like regular egg whites, but if you over cook them they become rubbery.

is this because they are pre-pasturized?
 
WOW.. I have never Noticed that... lol.. Good catch. :) .. I prefer the WHOLE EGG though.. more nutrients.. and the OMEGA 3 Cage-Free Eggs are THE GREATEST THINGS since sliced bread.. or.. better yet.. FRESH.. Still WARM Eggs straight from the chicken herself !!! MmMmM
 
I hate the egg whites in the carton. I rarely eat the yolk, but I still prefer egg whites from the egg than the pre-pasturized crap. It doesn't cook the same at all and it weirds me out. I like my eggs cooked thoroughly and slightly brown... no watery, undercooked eggs for me... *gag*
 
The cartons are so easy tho!

I get the big pack of 6 cartons at costco that has egg whites and some beta carotene in it (for color). 2 whole eggs and about half the carton. LEGIT! Also 36 x-large eggs for $2.79!! I love costco.

I just can't spend all that time separating the eggs, and the cartons don't really bother me.
 
Ehh separating eggs isn't THAT time consuming.. what.. maybe 30 seconds per dozen if u are quick and efficient..

I did some research into the whole (egg white vs. whole egg thing) and all signs point to if you eat the the whole egg, it's NOT going to make you gain FAT.. and more nutrients are located inside that wonderful YOLK..

it's a stigma in the bodybuilding world.. or HELL in today's society that the YOLK is bad.. when in all actuality the whole egg far outweighs the egg whites only syndrome. People don't have to take my word for it.. nor do they have to believe me about it..

Yes, MAYBE during the last stages of a contest prep.. switching to solely egg whites is a good idea.. but in that instance i believe that they should be treated as a beverage and NOT a cooked food.. so the whole runny/rubbery doesn't apply..

I seperate mine too....I have never bought them in a carton...

I notice when cooking egg whites from the shell they seem to become a little "drier" when fully cooked...I guess I like mine between watery and burnt...lol
