Spare ribs, baked beans and potatoes. Smoked using the 3, 2, 1 method. Rub recipe is as follows:
2 tablespoons garlic powder
2 tablespoons onion powder
2 tablespoons black pepper
1 tablespoons salt
2 tablespoons chili powder
2 tablespoons cumin powder
2 tablespoons brown sugar
3 to 4 tablespoons paprika
2 teaspoons cayenne pepper
Smoke for 3 hours. Removed and loosely wrap in aluminium foil. Before closing the foil around the ribs, drip a little apple juice on and around them. Smoke for 2 more hours with foil. Removed foil add glaze or sauce if desired and smoke for 1 more hour. Tender and juicy, bone pulls clean out.
