Clean-eating Power Protein Bars

Combine:
1 cup chocolate protein powder
¾ cup cocoa powder
½ cup spelt flour (or any flour)
2 cups rolled oats (not instant)
½ cup oat bran
½ cup coarsely chopped flax seed
½ wheat germ
¼ cup unsweetened shredded coconut (optional)
1 tsp sea salt
2 tsp cinnamon
¼ tsp nutmeg
½ cup agave nectar or honey
3 tbsp raw brown sugar (optional)
1 cup extra dark chocolate pieces (70% or above)
(add ½ cup raisins or dried apricots if additional sweetness preferred)

In separate bowl, mix together:
¼ cup healthy oil
2 cups fat free cottage cheese
1 cup nuts
2 tsp real vanilla

Add cottage cheese mixture to oat mixture. Combine thoroughly.
Flatten mixture into baking sheet lined with parchment paper.
Place on second sheet (so bottom does not burn).
Bake at 350 degrees for 25 minutes. Remove. Cool slightly.
Lift onto cutting board and slice into bars.
Return to oven to bake for an additional 15 minutes.
Cool on wire rack. Makes 2 dozen protein bars.
