Here is an alternate pancake recipe that has a little more protein than the average pancake. I do a batch of these on Sunday that I can portion out for quick re-heating in the morning before work. I have very little time in the AM, so anything that can save steps is a plus. This one really works well for me.
5 cups Hungry jack mix
5 egg whites
1 whole egg
3 scoops vanilla protein powder
1 cup plain oatmeal
3 Cups skim milk
Mix all ingredients throoughly in a mixing bowl. Let sit for 15-20 minutes. Pre-heat a cast iron skillet to a low setting. Make LARGE thick pancakes one at a time.
I like them big and realy thick. If you like them smaller, you can add water or a bit more skim milk to thin the batter out. You can also add blueberries, cinnamon, or whatever other flavors you like.
Yield=13-15 large pancakes
I split the batch up into 5 equal portions in separate tupperware containers (Mon-Fri breakfast).

Lite syrup (1/4 cup) 100 0 0 0
I'll have a portion of these pancakes plus something else like a protein shake, cottage cheese, or an omelette (see my other recipe).
