I need some good bake chicken recipes!

Ok guys let me see your suggestions! I will be needing all kinds of opitions to cook chicken because that's all i will be eating next month during my cycle.

When I bake chicken, usually I don't follow a recipe, though. I'll just take boneless skinless chicken breasts and sprinkle some sort of seasoning on them (usually something from McCormicks), and then bake for 25-40 minutes at 425 degrees (until done).

I got really creative a couple weeks ago, and put some minced garlic, plain yogurt, and curry (should have mixed those together) spread over the chicken and baked. Turned out pretty good, definitely was different!

Yeah, this was just something quick. I actually really enjoy making indian food (and everything I cook takes yogurt - I use goat yogurt due to my kids' milk allergies) I always marinate it at least a couple hours. Those dishes I usually cook in the pressure cooker, though - this was just something I decided to do quick when we were sick of chicken (bought like 20 lbs on sale for like $.99/lb). Still turned out good, and baking at the higher temp (and these were thick breasts) seems to keep it pretty tender anyway. Next time I'll definitely marinate :D

I tried once, but just using the oven instead of a "yogurt maker", so temp probably wasn't consistent. Also, I used whey protein instead of dried milk that my recipe called for. It didn't thicken as much as I'd have liked, and I was scared to try it :D

I have a yogurt maker that I picked up at a garage sale, and need to try it again soon. I'll probably try to make goat yogurt, as I'm the only one in my family that's not (at least mildly) allergic to cow's milk.
 
Hey Al,

Ya don't need an oven or a yogurt maker -- You can use your coffee maker or just some heavy kitchen towels!

yo latin,

i use to cook my chicken let it cool and than mix 3 tbsp (big ones) of peanut butter with it, than i put some safflower oil in it to keep it from being to dry..
well it is very easy for me to make and take to work. and i love the taste.
