This is a recipe that my grandmother gave me that she used to make during the Great Depression. It was cheap and filling and I use it quite often as a post workout meal. You'll need:
-5 medium sized Yukon Gold potatoes
-1/2 cup skim milk
-1/2 TBSP pepper
-2 lbs. lean ground beef or ground turkey cooked and drained
-1 small to medium sized head of green cabbage sliced and shredded
-1 large white onion sliced into rings or diced
-2 cans condensed tomato soup
-1 soup can filled with water
-1 TBSP ketsup
-2 TBSP light brown sugar
In a casserole dish or slowcooker, layer a portion of cabbage so the bottom is covered, then a layer of onion and then a layer of meat. Repeat layering until all ingredients have filled dish or cooker. Be sure to top the last layer with cabbage.
Combine soup, water, ketsup and brown sugar in bowl and mix well. Pour soup mix evenly over cabbage/onion/meat mix.
If you're using a slow cooker, cook 4-6 hours on medium heat. If baking, preheat oven to 350 F and bake for 30 minutes or until soup mix is bubbling and top layer of cabbage is singed.
Meanwhile, in a steamer, steam up potatoes until soft enough to mash. Combine potatoes, 1/2 cup skim milk and pepper in bowl and mash.
Let cool for 1-2 minutes and dish out a serving of mash potatoes onto a plate or in a bowl. I prefer to make a dished out bowl of potatoes and fill it with the casserole mix.
The casserole freezes very well and leftovers are IMHO better than the night of.:thumbsup:
