Yogurt Chicken

This is the most tender grilled chicken you'll ever have. The live cultures contained in the yogurt break down the proteins and leave it juicy and tender.


Ingredients:

2 lbs chicken breast
1-2 cups plain yogurt (be sure it contains live cultures!)
1/4 cup olive oil
1/2 tsp ground black pepper (more or less)
1/2 tsp salt (more or less)
1 tsp garlic powder (more or less)
1/2 tsp sumac (optional)

Method:

In a small bowl combine all ingredients except chicken -- adjust seasoning to taste (but don't get it too salty), place in a 1 gal zip-lock bag with the chicken. Toss to coat chicken

Marninate for 48 hrs, turning over a couple times each day.

Grill chicken on a clean, lightly greased grill over medium heat for 5 min a side, or until done.

Remove from heat and let it set in a covered bowl for 5-10 minutes before serving.

Can also be done under a broiler on a rack.
 
Is that what they do with the Indian red (tandori) chicken. I asked and they said its some yogurt seasoning. I think turkish kabobs are similar
 
I'm trying something today inspired by this - basically, 24oz of plain goat yogurt, 1 tb of curry, turmeric, and paprika. Salt to taste... Going to marinate chicken for 24 hours and bake - I'll let you know how it turns out.

Dunno about the Tandori, but I do know that my friends from Iran (been in the USA 30 yrs) use yogurt for marinades all the time. They generally don't add any oil tho.
 
The yogurt did indeed make the chicken moist and tender. I need to revisit my spices a bit, though. It was good, but not as good as it could have been. I have a bunch of indian recipes that I really like, I'll try and post them soon.
 
Note that the spices I need to tweak are for what I said I'd try (with the curry) and report back on.
