Is it just me or is this just another excuse for lazy people? I think its mostly not overtraining, but rather not knowing how to train.

I don't know if I've ever bought into the theory of overtraining. I mean, I would never do the same body part multiple days in a row, but I've always felt that if you give each muscle a few days between training that muscle, you are okay.

Agreed.
Thats exactly what it is, its the lack of knowledge. I have a friend that I have worked out with (well hes worked out with me on and off) for about 6 years, and he still wants to do stuff like Monday chest Tues Triceps Wed Shoulders..... Thats when he can actually stay focused on isolating if not he tries to do an unorganized half body workout every time.

Its not a theory and you said it urself in ur same post, if u give ur muscles ample time for rest ur fine, but some idiots train 3-4 hours a day 7 days a week and yes that is detrimental to muscle growth

I usually do 5 -6 exercises with 2 warm ups and 4-5 working sets on all movements. So about 25-30 sets total.

also, I listen to my body if it says take the day off I do and go to the beach and chill.
