Mystics Magic Omelette!

A very nutritious, delicioius omelette which is easy to make.

Ingredients:
1 egg (whole, with yolk)
8 egg whites
1/4 cup fat free cheddar cheese
1/4 cup diced green peppers
2 cherry tomatoes
1 tsp. black pepper
1 tbs. olive oil
1/4 cup salsa

Mix egg and egg whites in a large bowl. Make sure you mix it very throughouly to the point where it's light and bubbly. There should be tiny bubbles everywhere and mixed very vigorously. This will help make the omelette very fluffy.

Chop up tomatoes, green pepper and place them on the side, as there will be put into the omelette towards the end. Make SURE the green pepper is diced very fine. The harder the veggie the harder it will be to cook, if it's not chopped up finely.

Set your stove to medium/high setting and spray the pan with Pam. Also put a tablespoon in the middle of the pan and roll it around a bit while it heats.

Place the beaten eggs in the pan and wait for it to heat. Move the pan around so the yolks get eventually distributed. Use a spatula and seperate the entire parameter of the omelette., as this will indicate when you should add ingrediants then flip it.

Once you have the omelette cooked on the bottom add tomatoes, cheese, and green pepper on one half of the omelette, which should still be laid flat on the pan. Once the ingrediants are placed in there, using the spatula fold the right and left ends and then immediately flip the omelette.
* if the ingrediants fall out while you flip the omelette you haven't cooked it long enough*

Once the omelette is flipped use the spatula and cut it in two halves. This will enable you to see it cooking, and you'll have a better idea when it's done. At this point add the black pepper on top of the omelette to each half and move it around the pan with the spatula. Also press down on the omelette to ensure proper cooking.

At this point you can wait until you see it turn brown on the other side, and then flip it, or place it on the plate you'll be eating it on.

Once it's done cooking add the salsa to each piece and ENJOY! By far my most favorite breakfast item to make., however I find myself eating a couple throughout the day. Has veggies, low fat, almost no carbs and lots of protein.
