I don't know if you would call this "healthy" but except for the BBQ sauce there's really nothing bad in it. If nothing else it would make a great cheat meal
Ingredients:
7 Boneless, Skinless Chicken Breast
Salt and pepper
1 onion, finely chopped
7 cloves garlic, finely chopped
2 cups barbecue sauce
1/2 cup apple cider vinegar
Hot pepper sauce
6 kaiser or French rolls,
split 6 ounces shredded cheese (about 1-1/2 cups) (I like Fiesta Blend)
(I didn't think about taking pics and sharing until after I had already started so the onion is already chopped in the ingredients pic)
Chop up the onion and the garlic pretty fine. I have this thing from Pampered Chef that works awesome, and I had it way before the "Slap Chop" came out
Take the chicken and season it with a little salt and pepper. Pat in into the chicken.
Add the chicken to a large pot, I think the one I used was 8qt. Put the chicken in and add just enough water to cover the chicken. I think it took a little less than 2 cups. Then add the chopped onion and garlic. Then add your 2 cups of barbeque sauce of choice. I like Sweet Baby Rays. Good blend of sweet and tangy, but anything will work.
Then add your 1/2 cup of Apple Cider Vinegar.
Add a few splashes of Tobasco or some other hot pepper sauce of your choice.
Here it all is in the pot.
Bring all this to a boil in the pot. After it starts boiling, reduce the heat and simmer long enough to cook the chicken. Somewhere around 15 minutes should do the trick.
Pull the chicken out and use two forks to shred it. It doesn't really matter if it's still hot, but it's easier if you let it cool a bit.
While you are shredding the chicken, bring the remaining sauce to a boil, skimming as necessary until it is reduced by half, between 15-20 minutes should be about right.
This is before when the sauce is still watery.
After it is reduced it will be thicker, more like barbeque sauce consistency.
After you have the chicken all shredded add it back into the barbeque sauce.
Mix together and heat through and it is ready to serve.
Of course you can eat BBQ many ways, but there aren't many things better than a good BBQ sandwhich. I later went and bought some fresh Kaiser rolls, but at the time all I had were hamburger buns Toasted the bun a bit.
And then added the pulled chicken and put a generous heap of shredded cheese on top. Let the cheese melt a little and, ummm, ummm, good.
