This is delicious and super quick and easy to make. I have to give my wife credit for the salsa/avocado combination. It really is good.
Ingredients: (for 1 meal)
1 Boneless, skinless chicken breast
1 Avocado
6 Campari Tomotoes
Sliced Jalapeños (Fresh would probably be better when available)
6 Green Onions
1 Yellow Pepper
Ground Pepper
Lemon Juice
Jalapeño Juice
We use a yellow pepper for color, but bell pepper or red pepper would work just fine.
Slice up the tomatoes, green onion, yellow pepper, jalapeño and combine in a bowl or tupperware.
Don't slice them too small, vegetables taste better sliced thick.
Add a splash of lemon juice to the combined ingredients.
Add a splash of jalapeño juice to the mix. We like it spicy but judge for yourselves.
Add some fresh ground pepper.
Stir the salsa to mix everything together.
You can see the freshness!! :yum:
Now take the avocado and cut around the pit and separate into halves. Scoop out each half from the skin with a spoon and slice.
Cover the avocado with the salsa.
Meanwhile, on the George Foreman grill, have a piece of chicken grilling. I think it took 6 minutes to cook with the lid closed. Slice the chicken and plate it along both sides of the avocado with salsa and you have a very healthy, delicious lunch that really takes hardly any time to make.
