Tender/Moist Grilled Chicken Breast

-----------------------------------------------

--- for the brine----
3/4 cup kosher salt or 1/2 cup table salt
1/2 cup sugar

----for the chicken---

3 1/2 to 4 pounds of skinless chicken breast

1-2 tablespoons olive oil,
Salt, pepper and garlic powder to taste

1. Dissolve salt and sugar in 2 quarts cold water in large container.

2. Immerse chicken and refrigerate until fully seasoned, minimum 1 hour, maximum 4 hours.

3. remove chicken, pat dry, rub with olive oil and seasonings, place in a bag or container for 30 minutes (minimum), overnight preferred.

4. Fire up the grill and let it get VERY hot, set it up for an indirect cooking.

5. Sear the breasts over the hot side of the grill for 2-4 mins per side, move to cool side of grill, close lid and allow to cook for an additional 10-15 mins or until juices run clear when poked.

This can be done under a broiler on a greased rack. It will take a bit longer to cook

6. Remove from heat, place in bowl, cover tightly and allow to sit for 10 minutes before serving.
